Easy Football Food

Watching the football games at home this weekend?  Consider making some easy football food to keep your fans full:

My favorite football dish is Crock Pot's Honey-Sauced Chicken Wings, from their Best Loved Slow Cooker Recipes Cookbook.  Any time I've made this recipe, I always get compliments, yet it's so easy to make!

Honey-Sauced Chicken Wings

Makes 24-32 Appetizers

3 Pounds Chicken Wings

1 teaspoon salt

1/2 teaspoon black pepper

1 cup honey

1/2 cup soy sauce

1/4 cup chopped onion

1/4 cup ketchup

2 tablespoons vegetable oil

2 cloves garlic, minced

1/4 teaspoon red pepper flakes

Toasted sesame seeds (optional)

1. Preheat broiler.  Cut off and discart chicken wing tips.  Cut each wing at joint to make 2 sections.  Sprinkle wing parts with salt and pepper.  Place on briler plan.  Broil 4-5 inches from heat for 10 minutes per side, or unti chicken wings are brown.  Transfer to Crock-pot slow cooker.

2. For sauce, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes in bowl.  Pour over chicken wings.

3. Cover; cook on low 4-5 hours or on high 2 - 2 1/2 hours.  Garnish with sesame seeds, if desired.

 

Creamy Cheesy Spinach Dip

Makes about 4 cups

2 packages (10 ounces each) frozen chopped spinach, thawed

2 cups chopped onions

1 teaspoon salt

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

12 ounces pasteurized processed cheese spread with jalapeño peppers, cubed

Cherry tomatoes with pulp removed (optional)

Sliced cucumbers (optional)

Assorted crackers

1. Drain spinach and squeeze dry, reserving 3/4 cup liquid.  Place spinach, reserved liquid, onions, salt, garlic powder and pepper into 1 1/2 quart or other small-sized crock-pot slow cooker; stir to blend. Cover; cook on HIGH for 1 1/2 hours.

2. Stir the cheese and cook 30 minutes longer or until melted.  Fill cherry tomato shells, spread on cucumber slices or serve with crackers.
